Renowned Cuban-born chef, Ruben Leon-Acosta, is launching his third Pop-Up supper club event, under Pop-Up restaurant name ‘Nomada’.
The vegetarian feast will take place at The Rookery on Arthur Street in Faringdon. Ruben has devised a delicious menu of vegetarian dishes made using seasonal local produce wherever possible.
To start - Babaganoush topped with labneh and pomegranate seeds and served with home-made flatbreads and Tabbouleh
The main course - Nomada Tagine with couscous. Of Berber origin from the Maghreb, Ruben’s tagine combines sweet and savoury vegetables, spices and herbs to create a multi-textured dish and is based on the one Ruben made whilst working at La Palmeraie, Marrakech

available on the night at an additional cost.
Widely travelled, Ruben has worked as a professional chef for almost 20 years. During the recent London Fashion Week, he prepared a dinner for 200 people hosted by a group of designers, including Rejyna Pyo, Thornton Bregazzi, Roland Mouret, Margaret Howell, Del Pozo, Mary Katrantzou and Peter Piloto.
Ruben’s passion for cooking is very much influenced by his native Cuba, as well as his travels to Thailand, Vietnam, Morocco and France, and later working at some of London’s most renowned restaurants, including Ottolenghi, Sketch, Zuma and Eight over Eight.
“For every Pop-Up Nomada Supper Club, I want to ensure that both those in the kitchen and the food lovers coming for the experience will be involved in a joint adventure into the world of cooking by drawing on inspiration and influences that crosses borders and experiences,” says Leon-Acosta.
Ruben first enrolled at cookery schools whilst travelling, including Bapai Thai in Bangkok, the Red Bridge in Vietnam and La Palmeraie in Marrakech. He then went on to train as a chef at Yotam Ottolenghi’s Islington restaurant and later at Jamie Oliver’s Fifteen Watergate Bay in
Cornwall as chef mentor, before launching his own restaurant, Nomada in Bude, north Cornwall, in 2013. Ruben has also worked with Michelin- starred chefs, including renowned exponent of Thai cuisine, chef David Thompson, and leading UK chef, John Campbell, of Woodspeen in Berkshire.
The Nomada Pop-Up Supper Clubs will include Japanese, Korean, Middle Eastern and Thai menu nights served at beautiful and eclectic locations around the Cotswolds.

The Rookery Coffee Shop is a quirky, quaint space occupying the ground floor of a beautiful landmark building, a converted coachworks, in the centre of the historic Oxfordshire market town of Faringdon.
